85 Amoy is the creation of Ethan Leslie Leong — award-winning mixologist, chef, and pioneer of Singapore’s cocktail scene.

From being named Bartender of the Year in 1997 to crafting the world’s most expensive cocktail at $35,000, Ethan’s journey has always blended bold ideas with timeless taste. He’s curated experiences for names like Henry Golding, but his passion lies in something more grounded: good food, great drinks, and the kind of nights people talk about long after they end.

At 85 Amoy, that’s exactly what he’s built — a space where pasta meets cocktails, and every visit feels a little like coming home, only better.
